Suzie visits Newforge House in Magheralin, County Down. This five-star Georgian guest house is home to husband-and-wife team, John and Louise Mathers.
For the starter, John makes a dish of smoked eel, horseradish panna cotta and beetroot and apple salad. Back in her kitchen, Suzie replaces the eel with smoked mackerel, serving this with an apple and fennel salad.
For the main course, John cooks rump of local lamb with crushed herb potatoes, parsnip purée and kale. Inspired by John, Suzie’s making a simpler family favourite: easy-peasy shepherds pie.
John leaves desserts to an expert - his wife, Louise. Priding herself on seasonal desserts, she’s making a creamy baked cheesecake with poached fruit. Back at home, Suzie rustles up an easy dessert involving very little cooking - peach perfect pudding.
